so after playing linebacker in high school, and not playing football at all in college, he's "the linebacker coach" at Cal Lutheran at the age of 19, 20, 21?

Maybe he was linebacker coach? I went to a D3 school for first half of undergrad and my friend (who was a student) had the official title of assistant defensive backs coach. It qualified as volunteer hours.

Perhaps you just have poor reading skills, but serving as an assistant coach while finishing your degree is pretty self-explanatory.

Some schools/coaches allow you to put assistant coach even if you were only student assistant.
Hence, the reason I was able to put assistant coach on my bio.
