Honest question: Why are Young and Corral such Heisman favorites?

Because there aren't a lot of options this year.

You don't have the absurd stats of Burrow. You don't have the eye-popping feats of DeVonta Smith. The last three guys:
DeVonta Smith - 117 rec, 1856 yards, 23 TDs, several highlight reel catches
Joe Burrow - 402-527-6 / 5671 yards / 60 TDs / 201.96 rating
Kyler Murray - 260-377-7 / 4361 yards / 42 TDs / 199.20 Rating / 140 Att - 1001 yards - 12 TDs rushing

Corral through 6 games:
122-184-1 / 1728 yards / 14 TDs / 169.2 Rating / 88 Att - 450 yards - 8 TDs
Young through 7 games:
156-224-3 / 2082 yards / 24 TDs / 180.4 Rating

Neither Corral nor Young are on pace to match the guys who were winners recently; however, no one else is either. No running back is having an OMFG type season needed to overcome the fact that 8 of the last 10 trophies have been won by QBs (1 WR and 1 RB the outliers).

The kid at Costal Carolina is likely to obliterate the passer rating record that's been broken each of the past 5 years, but his rating is patently absurd that I doubt it will be broken after that (presuming he doesn't either tank the rest of the season or suffer an injury) - but he's not even remotely in the discussion.
