First time poster so flame away.

The reason ATM consistently fell off a cliff in November prior to Jimbo was the team was not SEC sized, mentally or physically. ATM caught lightning in a bottle with Johnny football and had an excellent O Line recruited by Sherman. Johnny made Sumlin a millionaire many times over and allowed ATM to transition faster than, in my opinion, normal.

The SEC is a huge grind and every team can beat anyone on any given weekend. The are no automatic wins in the SEC.

OU will perform better in the SEC due to size and talent but it will take a few years to get deep enough to be SEC tough. Texas may have a more difficult transition due to many factors discussed in this thread.

The worst that can happen to both teams is they languish in the big 12 for a few years and lose recruits because of the transition (see Bryce Anderson). OU and TU can play with anyone in a single game if they have time to prepare. The grind of the SEC comes with days to prepare. In my opinion, it is simply a different league where the teams are tougher and deeper. We will see, but Texas and OU will experience this soon.
