The only way I can see the expanded playoffs to be the least bit interesting is if they did the following:
1-4 teams are safe and will be in the playoffs
Have a play in round with #5 vs. #8 and #6 vs. #7
Losers are out. Then the winners play #4 and #3
The winners of that round matchup against #1 and #2 with the winners meeting in the finals. It keeps similarly ranked teams playing each other, and hopefully closer games.
I would still rather keep the playoffs at 4 teams, though and explore ways to keep the players engaged and not opting out.

Calling it quitting instead of opting out might create a negative stigma. That would help.
But realistically, now that the cat is out of the bag, players will start quitting when they fall out of playoff contention. Rivalry games and playing for good old State U don't matter to players like they used to.
I believe that every team should go into the season with a realistic goal of getting to the playoff. All conference champions should get in. College football is the only sport where half of the sport goes into the season knowing they have no path to win a title.
