I believe its the number of "successful" rushing plays over the total number of rushing plays for that particular player. Not sure how SEC Stat Cat determines what is considered "successful" but here are the numbers from last week:

Another stat that was awesome for UF was they had zero 3 and outs. That’s pretty damn impressive.
