So, if they are evacuating to that area, shouldn't anyone who has any booked room or place to stay give that up so the people who really need to be there can have those rooms?

LSU fans are projecting the situation in Louisiana onto their perception of the situation in Florida.
Baton Rouge is not just like Gainesville. BR is the 2nd largest metro area in Louisiana and the principal evacuation center for the largest metro area, New Orleans, which is susceptible to cataclysmic damage from hurricanes due to the levee system in a way that Florida simply isn't. Gainesville is the 15th largest metro area in Florida, half the size of Baton Rouge, and merely one of several options for evacuees.
If I'm SEC commissioner, I don't order games to be moved lightly. Last year, with the USC situation, the damage was already done, and we knew the scope of what Columbia was going to be dealing with. This year, LSU fans are begging for a game to be relocated based upon speculation as to possible worst case scenarios. That's a huge difference.
The teams can get there and, in all likelihood, play the game on Saturday. If you are worried about the fans travelling, the simple solution is for Florida to announce that refunds will be given to all ticket holders who request them; if the game is staged with only local fans in attendance, that would be just fine.
If things unexpectedly go south, having a cancellation wouldn't be the worst thing in the world for the commissioner to deal with. On the other hand, setting a precedent that we will move games whenever there is a possibility of a major storm would put the commissioner on the spot every time one of these storms comes up. The presumption needs to be that the game will be played as scheduled, not that we will move the game unless we are sure there will be no problems.

Gainesville is not in an evacuation zone. It is mostly coastal areas or along rivers.
Edit: I know people in St. Augustine that are just outside the zone.

There's a ton of hotels available in Tamps. Ocala seems mostly booked.
