Simple answer, defensive coverages do not count the QB as a threat.
You can "spy" the QB with a player like a LB but then you have to drop a DL to take his spot in the hook or flat zone he was supposed to cover.

LSU plays a 4-3, with smaller faster linebackers usually, while Bama plays a 3-4 with bigger bodies.
The way to expose a 3-4 is over the middle (drew a PI and a lot of the bigger players were over the middle) by forcing LBers who are 250 lbs into space, and on the outside, where you have a 200 lb rb matched up on 275 lbs DEs or 250 Lbs LBers. Bama has the rare guys who are usually that size and as fast as most teams non huge dudes.
