Alabama is able to continually recruits freaks at RB (6'3 230 lb type guys) who then are handed the ball close to 30 times a game and run behind one of the best offensive lines in college football. Not to mention in a Lane Kiffen offense with the offensive talent they can recruit at WR they are able to keep a relatively balanced offense. Henry is both a beast and a product of his system and it is no surprise that Bama rb's continued to get invited to NY when they are in the championship race every year.
The better question is why does it seem like McCaffery has very little chance to win the award when he does far more for his team with less?

Honest answer to your question? Because he plays at 10:00 PM to half the audience that Henry does. He'll still be a solid to very close 2nd, IMO.

Who you do it against matters too. Look at who McCaffrey had his best games against compared to Henry. He had one great game all year against a top 25 defense (though to be fair he didn't receive anywhere near enough touches against Northwestern). The majority of his production came against the likes of Arizona, Oregon and Cal who are all terrible defensively.
