Play by play? Not much unless it is to over-rule or make a suggestion in a key situation (3rd & long, 4th & going for it, etc).

HC's usually are coaching the assistants during the game. Suggesting adjustments to strategy, informing them of goals on given situations, making personnel decisions. Between possessions, the HC will communicate to the Offense or Defense in terms of good/bad from previous drive and make suggestions.

HC will make almost all calls on whether or not to go for it on 4th down, when to call timeouts, when to use surprise/trick plays that may have been practiced.
