More height = longer arms. Having length at defensive tackle makes it easier to tacklw RBs, sack QBs, and bat down passes. Don't tell me that height doesn't matter. Most of the exceptions for short DTs have been guys who excel at pass rushing and are used that way.

Height doesn't matter for interior DLmen, except in that it affects mass. Height can HURT an interior DLmen, in that it gives him a higher center of gravity and makes it easier to get under his pads. If you'd ever played or coached in the front 7, you'd know this. It's elementary.
