Because Mrs. Tantal probably has induced a form of intolerance, probably through diets if she's that thin. More than likely she has killed off a lot the bacterial strains that are good at breaking down that specific carb. If she ate a small bite of pizza, a little a day, her body would adjust over a week or two and she would probably fell much better for it. Probiotics is being hailed as some cure-all, which is dumb, but it's not complete bullshite.

People with a true gluten allergy, called celiac disease, are few and far between. They are pretty pissed about this fad.

She does the whole probiotic thing, but she was fat for a while (thyroid crapped out) and she couldn't eat it then either. This is not something that's been induced by dieting.

Why would they be pissed? This fad has probably brought more gluten-free products to the market, which should be good for people who are allergic to it.
