Okay so I'm making a fake study using % body fat among 20 ppl. Taking measurements at baseline day 60 and day 120. What test do I run to see if theres a significant difference?

You'll use a p-value test to show probability, generally. So, if you're trying to show a significant difference between the two measurement dates and the baseline rate in terms of their deviation from the baseline, a p-value test would be ideal. Lemme text AC to make sure.
