I very rarely control any player on defense as I tend to frick them up. If you're picking the right play, you shouldn't have to do anything because you've put your players in a position to make a play.
It's funny though, I'll run the same pass play 3 time in a series as the only play out of a particular formation. When the other guy realizes what's coming next, sometimes they'll move a MLB to the spot I throw, that's when I audible to the spot he just left.

Defender I control depends on the situation. I usually play with MLB or DE. If you're good with the MLB you can take away passes over the middle, I usually over run the route though

If I'm actually controlling anyone its someone on a blitz or the deep safety playing a zone.
I'll base where I'm going with the ball on the player being controlled only if it is obvious they aren't keeping to their assignment. Otherwise I don't bother with it.

Same, and it's just a good blitz to call anyway since it seems like 50% of players online can't hang in the pocket and want to roll out every time they throw. Running a well timed CB or OLB blitz (or even running a zone blitz with some shallow zones in the flats) helps break them of that little habit.

I can't stand playing dudes that just scramble the whole game. Defenders go into full derp mode if the QB takes a few steps towards the LOS. When I'm playing with my buddies teams with QB 85 speed or above are off limits
I'm not much of a blitzer. I'm more likely to drop 9 in coverage than send 6 in pressure. I employ a bend but don't break strategy. If I can get you to throw it enough eventually I'll pick it off

Actually online i started "letting" folks score on their first drive of the game, just to see what they liked to do.
Then i take away their favorite offensive toys one by one

I like georgia because they have a plethora of them at mismatch positions. Speed at slot, 2 good backs, a good fullback, and a serviceable tight end.
In regards to the passing game of course. I'm a 60/40 pass to run guy, Gurley is just a bull on this game though.

This is definitely how I look at it as well. The first score is pretty much a given (as is the opponent choosing to recieve first, and then trying to return the kickoff from 7 yards deep straight up the middle and making it to the 17). Most people seem to have about 3-4 plays they actually know well, and if you can shut them down they start getting sloppy and throwing picks.
I'll run almost always from a 4WR spread set, and pass from a 21 or 22. I love using tight ends because I can see them quickly and if he's calling blitzes on me they are great safety valves.

My kick return game is strong. 5/10 end up around the 15, 4/10 end up around the 40, and 1/10 gets housed or returned into opponent territory.
The tight end is the toughest player to consistently cover because his guy never lines up directly over him. It's inside technique with an OLB leaving the out or corner open or outside technique with the nickel leaving the seam or post open. Georgia does have the best coverage LB in the game though, another reason I like playing with them.
The false steps that defenders make in man coverage on this game is a terrible flaw. Digs, outs, curls, and corners are pretty hard to stop in man. Defense in general is pretty tough in this game if you're playing a competent offense.

Seriously, that's exactly my game plan for the most part.
Mainly I just try to be multiple, though. I run a battery of differet plays out of the same looks. Nothing too fancy (I was never a wizard on the controls once the ball is snapped), but i will take the little cracks in the defense for 4-6 yards all day long until my opponent loses patience and sells out to shut down the leaks. And then....I strike

I too like to pass from run sets and run from pass sets, and I hate playing guys that employ that strategy
