11:00am games seem to favor the road team.

11AM games favor the home team, because the road team barely has time to check-in and get some sleep. At least that's what I've always heard.

Most teams travel on Friday morning prior to the game. They will arrive in time to do a walk through on Friday afternoon and then go back to the hotel, have a team dinner, position meetings, then to bed. They're not catching the redeye through ATL the night before the game.

They'll still wake up at the same time on Saturday regardless of the kickoff time. The only difference will be the type of meal(s) they have Sat morning and how soon they leave the hotel for the stadium.

I've always heard the opposite. Petrino used to talk about how he loved 11 am kicks for road games because the crowd isn't as into it. Also, though it doesn't really have anything to do with the game, the players are home in time for dinner and sleep in their own beds that night.
