It matters in the context of a playoff IMO.
A tougher schedule should be an advantage in the context of a playoff, especially since the SEC is staying at 8 conference games. You want those 8 games to boost your SOS. I want Bama to have a very tough schedule every year. If UT continues to suck (and I don't think they will) that will come back to bite Bama eventually when we miss out on a playoff spot due to SOS.
I think SOS will be the #1 criteria for the selection committee, just like it has become for the basketball committee. It is by far the easiest way to explain a selection to the media and that is what they will do. If there are 2 undefeated teams and three 12-1 teams, they will take the two undefeated teams (from a Big 5 conference) and the two with the highest SOS of the 1 loss teams.

Yada yada, compare past 8 or 9 years w/l for LSU v fl against Bama v ut.
An extra loss could eliminate you from contention period.

That would be a perfect world. Where you get rewarded for beating a great team, penalized for losing to a great team, and heavily downgraded when losing to a bad team.
SOS hasn't been a factor in college football (inside the BCS conferences) that I'm aware of. If it had been Bama definitely wouldn't have had a rematch in 2011 (and just so I'm not perceived as being biased - LSU may have not gotten a shot in 2007).
And if you were actually rewarded for strength of schedule and not just penalized should you lose a game, then no one would ever complain about it. Well except bama fans because they'd be continually left out of the playoffs due to weak SOS.
