Saban's just a control freak. He'd be the same way if he'd gone in to any profession. Spurrier, while never as freakishly single-minded as Saban, was pretty damned intense back in the '90s at Florida. His teams might have looked loose with the whole Fun-n-Gun thing, but they were very disciplined. He's just gotten more diffident as he ages, especially since he knows he's at a place where the fans and admins are just incredibly grateful he even took the job, so the pressure to focus on every detail has ebbed for him. And, frankly, he's earned the right to relax and play golf a little more as he approaches retirement.
