Not true. The French settled throughout the south. Just because it's not cajun/creole doesn't mean that it doesn't have French influences.

The amount of food nationally known for it's French influences is 99% from Louisiana.

As far as the rest of the south, it's fried, grilled, and baked on holidays. Over-cooked and under-seasoned is more likely than not.
