I know. Southern food has a lot of French influences. I don't eat a lot of fried foods though... and far too many southern foods are fried.

Que? Only in Louisiana would that be true. The rest of the south is Scot-Irish and English.

I really don't either. I mean I won't turn it down if it's done right but I looooove slow cooked food. It allows a good seasoner with a good palate to really make something special. Frying is more of technique kinda thing which is great for some things but not everything.
