1. KCBS (of Missouri) is the largest sanctioning body for competition.
2. Restaurant BBQ is not a measure of good BBQ.
3. The largest competition in the world is held in Kansas City, Missouri every year.
4.Pig is good, but brisket is king. And I have to admit the Texans do it almost as well as I do.
