NFL is a totally different ball game. All the players are good. Saban can cherry pick whatever he wants in college. Yes, he works harder than others at it and deserves his accolades. However, when you take his ability to get the more talented athletes away, and he has to play with equally talented players, he obviously is not considered one of the best coaches. He is definitely one of the best coaches, of all time, in college.
