I'd set it up like the NFC/AFC in the NFL.

4 divisions with four teams each.

West:
aTm
LSU
Arkansas
Mizzou

Dixie:
Alabama
Auburn
Ole Miss
Miss. State

Smokies:
NC State
Kentucky
Tennessee
South Carolina

Coastal:
Florida
Georgia
Vanderbilt (well they needed a home)
Clemson

3 Division games. Then 2 teams from each of the divisions. The schedule is based on how each team finished the previous season.

Then a two week playoff with the division winners.

Profit.

This makes sense considering South Carolina is closer to the coast than Clemson
