As an aside for folks not from Texas, beef ribs are not the norm but are often available. Typically you get 3 options (Baby Back, St Louis, or Beef with occasionally "Country Style").

As I said, one of the great things about Texas BBQ is the diversity. For instance one of the most famous Texas BBQ places is Salt Lick in Driftwood outside of Austin and their sauce is sweet unlike most Texas BBQ.
