Both are extremely good and I'll eat either depending on the day. I do like beef most is Texas and pork from Memphis (also hear SC has really good pork) Texas just has the best of both worlds.

I agree that brisket is harder to do right. But, done right, it beats the hell out of any pork.

I'll say this for the Arkansas BBQ that I've had...it's light years better then South Carolina BBQ. They actually put mustard on their BBQ in that state. It is obscene. Between that and boiled peanuts, one has all the evidence one needs to conclude that that state is a collection of seriously disturbed palates.

I have had some very, very good BBQ in Arkansas.

man, you gotta get out more. there's great beef bbq all over austin and the surrounding area.
