Because it's a sign of respect. Like "sir", "ma'am", "Dr.", etc. Most older Alabama fans will refer to any current Alabama head coach or assistant, as "Coach...". And certainly use it when referring to a popular former coach. Coach Stallings, Coach Bryant, etc.

i met bill curry several times. never once called him bill or mr curry. always coach curry. super nice guy.
