I deleted that reference to save space. It’s not just OK. Also, this thread is about being the best/first/only in the South and there are a lot of really great appetizers.

Agree on Provel, but in the best shops, it's not overdone. Elicia's is the best STL style IMO. But actually I prefer NY style with mozzarella.
Meth is out in the sticks mainly.
