That's just the predominant sauces. All Carolina BBQ styles are either whole hog or pork shoulder for the meat and are cooked similarly other than the sauce type. Most carolina bbq places offer all of them. I prefer light tomato and heavy tomato sauces myself even though I live in the Mustard area. Most places have four (or even 5 if they have a memphis sauce) sauces available.
