I smoked some baby back ribs that were by far my best cook of my life.

Everything was spot on. Flavor, smoke, and the ribs were moist and very tender. Not fall apart tender (overdone) but little resistance when taking a bite.

Most of the time mine are tasty but come out a little dry. I was on top of them today and I might have cracked the code (I hope). The BBQ sauce made them even better but not needed.

Nah, I was at least entertained tonight. Last week I was just frustrated. This week I was entertained and frustrated.

I went to a place in Boaz Alabama called Bama Bucks for lunch. Had to finish the steak tonight. Damn good food though.

3 lbs ground beef seasoned with Tony Chacheres
3 Onions
3 Bell Peppers
2 Jalapeños
2 Serrano Peppers
Whole jar of minced garlic
2 bottles Heinz chili sauce
1 bottle Heinz 57
1 Yuengling
4 cans of stewed tomatoes
6 cans of pinto beans
2 cans Hot Rotel
3 packs hot chili seasoning

That looks good. Has some heat to it. That’s how I like mine as well and I am a bean chili guy too. Love the texture of meat and beans with the tomatoes and onions.
