The middle of the field is wide open on obvious (2nd & 3rd long) passing downs

This has been the same since Steele 1.0 in 2007. So are check downs out of the backfield for 15+ yards.
Same thing no matter who is DC.
3rd and Steele, 3rd and Kirby, 3rd and Pruitt, 3rd and Golding. 3rd and Steele. Rinse & repeat.
Fix this crap and we are looking at more rings than fingers.

You’re griping about the defense?
Kiffin is a good offensive coach and a lot of what he was doing Saturday was scheming the middle open with bunch formations wide, motioning the RB out, and stuff like that. It was intentional to give Dart the option up the middle.
The main difference between the two halves was that the defensive line began winning the battle up front and started pressuring Dart without losing contain.
I’m of the opinion that this is the best defense we’ve had since Pruitt was here.

It's not "Steele's" defense. It's Saban's defense and yes it's a vulnerability in this type of defense.

On this play, the TE made a nice fake like he was going to engage Turner to help the LT, then quickly released to the middle of the field. Looked like Lawson was spying Dart. Not sure if he was supposed to spy, and also cover the middle of the field or what? I'm not an Xs/Os guy. It seemed like he would be the only one responsible for the that area though.

As Goombaw mentioned above, this was a great play call by Kiffin, but my first gut reaction is that this was on Downs (2).
Kiffin motions their WR over to 1, and I think you can see him briefly point out to 2 that he now becomes apex here (first underneath), which presumably hands the TE over to him.
This would make 32 the second underneath (or hook), which is run-first responsibility. Because of this their play action freezes 32, who cheats down to fill the gap instead — it looks like maybe we coincidentally also get caught in a LB blitz (17), so both middle LBs have cleared at this point.
Instead of playing the apex and rotating down, 2 backpedals and drops without first eyeing his key, while the two WRs at the bottom cross and pull off 13 and 6 deep. He still recovers to make the tackle, though.
Maybe just simply a case of Downs being an inexperienced/young contributor and getting confused. But either way, it was a nicely scripted design by the offense.
