Eating a little healthier than last night with those dino ribs.
Baked some cabbage steaks, crispy deep fried green beans with a sriracha mayo sauce and spicy air fried shrimp.
] I told my wife that having eaten a little healthier means I can have an extra scoop of ice cream later.

Sounds good. Just plan to give them a good 10 hours and maybe more to allow them to rest a bit before cutting into them.
Beef Dino Ribs

Alright, so yesterday was the first time I cooked those big beef ribs.
These were almost 5 lbs and after a good trimming I seasoned them with Blues Hog Bold and Beefy seasoning and let 'em rest for about 20-30 minutes before putting them in the Pit Boss pellet cooker at 250 degrees with post oak pellets.
After about 30-35 minutes I realized I didn't get a picture of them on the smoker.
They went on at 10:45 am and about 4:30 they were at 175 degrees so I wrapped them in brown unwaxed butcher paper and put them back on the smoker.
I honestly didn't expect them to take till so late to get done. At 6:15 I brought them in and let 'em rest while I grilled some green onion sausage.
Unwrapping them I didn't expect them to be so tender and juicy but they were so tender the bones were falling off.

The flavor and tenderness was amazing! Even the fat was delicious and like warm melting butter.
No plated pictures as I was starving and simply forgot. Served with homemade potato salad and cole slaw.
I've been craving a good muffuletta lately so I decided to do some at home using Bolillo bread and some Texas Toast bread and did them panini style.
These have all of the real ingredients and the outer side of the bread had a little coat of melted butter.
There's a donut shop in Covington LA called Spare Donut and I love donuts so with that in mind I made spare muffulettas. Also the Texas Toast is perfect for the muffuletta because it's not nearly as bready.
Cooked a pot of white beans with pickled pork and green onion sausage today. I decided to whip up a batch of buttermilk biscuits to enjoy with the beans.
Hot out of the oven with melted butter basted on them.
Had breakfast here tonight. French toast, eggs, bacon and fruit cocktail.
This was made with brioche Texas Toast bread.(looks burnt but it wasn't)
Had some extra hot dog buns left from the other day so I made French toast with those as well.
I put some baby back ribs in the smoker at noon and they were delicious! Not exactly how I expected them but they were great. Fall off the bone tender.
Had a fantastic meatball and beef daube poboy.
Simple Stormy Morning Breakfast

Having my third cup of coffee while the sky opens up I felt like some eggs.
Mmmmm..... I miss having my chickens and fresh eggs from the yard but these will do.
In keeping with slight Cinco de Mayo-ish, we made a 7 layer dip and super nachos, along with cold beer and margaritas.
It felt like a good evening some some BLT's for dinner!

Grilled Bang Bang Salmon
Had a great meal here this evening!
Started off with grilling some yellow squash and zucchini, then made a creamy spinach parmesan orzo and then grilled some salmon.
Time to eat!

Breakfast night here which was French Toast, thick slice bacon and scrambled eggs.
Had a salad and chicken parmesan with angel hair pasta.
Cooked a couple of pounds of red beans today.
Hard to beat some cornbread to go with red beans.

Fajita Marinade
(for 3lbs. of meat)
1 cup of Olive Oil
1 cup of Soy Sauce
4 Tbsp. of Hot Sauce
3-4 Jalapenos I used 4 and deseeded 2 of them.
1 med. Onion quartered
2 Tbsp. Cayenne Pepper
2 tsp. Meat Tenderizer
2 Tbsp. Fajita seasoning(usually Fiesta brand)
3-4 toes of fresh garlic
1 Tbsp. Smoked Paprika
2-3 Tbsp Liquid Smoke
2-3 Tbsp. Lemon Juice
For spicier flavor sometimes I add one or 2 canned Chipotle peppers and some of the liquid/sauce.
Put everything in a blender and liquefy until smooth and liquidy.
Pour over meat and allow to marinate a good 6 hour to overnight.
Enjoy!
