re: These are the highest paying jobs, according to Glassdoor

I suppose the "entry level" terminology could mean people "moving up" in to these roles. I don't know how they would determine that though. There are several fields that are far from entry level
e.g. plant manager, manager Financial planning, corporate controller.
Plant manager seems the most off base. A plant manager around S. La can be a several hundred grand salary at a large plant. No clue what all falls in to that though.

The idea is great, but it is also about marketing. For example, "sourced from xyz" and for most people they don't have a clue what xyz is, but it attempts to give validity and value to the product, but some times that source is located next to a landfill or refinery, and the majority of us are none the wiser.

re: Boiled Crawfish prices wow!!

It's fairly simple supply and demand. The "excuses" for natural reduction of supply in the past are valid.
1. Do they artificially inflate prices with collision from suppliers before Easter? Absolutely
2. Do adverse weather conditions suppress supply? Yes
3. Do spillway conditions dictate supply when all you can rely on is ponds early in the season? No doubt
But, the truth is, national demand is greater than ever. Crawfish exports are continually growing and that trend is unlikely to stop. As long as suppliers are capable of selling their whole supply at current market value, they will. And that will continue to negatively impact locals ability to procure cheap crawfish like we have in the past. We now have to wait until later in the season than we have in the past to see $1 lb until the spillway starts running and supply exceeds demand.

People that say "they" and "us" are just as much of the problem as the people making a conscious effort to put a black person(male or female) in any role they can.

re: What temperature is too hot to cook pizza?
Posted by LSUAfro on 1/8/19 at 6:53 pm
When I had a wood burning oven, the ideal temp ranged from about 700-725 depending on how close to the fire the pizza was. Anything less than 650ish and it wasn't hot enough to create a great crust, and anything above 750, you had to rotate the hell out of it to keep crust from burning. 800+ was just a fire drill.
re: Where to live in Baton Rouge?
Posted by LSUAfro on 1/7/19 at 10:42 pm
What do you want to do with your time? Spend time commuting to STF? Have your wife and kids closer to activities in the city or do more country activities? Does your family spend money on a lot of activities? Consider the variables of city vs rural living? $150k in baton rouge with 3 kids in private school won't allow you a large housing budget if you provide the only income and will not put you in a desirable neighborhood.

Out of curiosity, why would someone down vote soemone suggesting to learn the business and position themselves to be more marketable in their company?

I've heard about how accounting will be obsolete because computers will take it over & its incredibly boring with no reward. Any thoughts on that?
I've done research and work with companies that are doing the AI work to automate some of the accounting functions that could be taken over by automation. We're quite a bit a way in eliminating the most simplistic accounting functions that offers a real solution to eliminating accounting clerical jobs. We're no where near eliminating thought provoking accounting positions from my experience.

The first 10-15 year track for big 4 folks income I'd say almost certainly out paces the majority of industry accountants not coming from the top schools. But high perfromers in mid to major companies can get there as well with usually a good bit less wear and tear. MBA, CPA, CIA, CMA etc for industry is essential to rise though. My advice for industry accountants in a good field would be to really get involved with ops, marketing, strategy if possible. Learn the business. There aren't layers for promotions like public. You don't get promoted every 2-3 years as there often just aren't layers in many departments to promote to. If you can show your skillset could translate in to ops or strategy analytics for example, you have more portential to move up and earn quicker and get out of a limited accounting department org chart when a job becomes available.

If you're going all in locally, I'd go MBA at LSU and take accounting electives, spend another semester taking required accounting classes to sit for CPA. Macc is redundant with the CPA. It only may sense for those programs like UT that do the 5 year 150 hour program with a Macc at completion...IMO
Or even start taking online accounting classes now and start MBA at some point. You might not even like accounting.

re: 10gallon black pot gumbo
Posted by LSUAfro on 11/17/18 at 4:08 pm
I always pre cook my roux the night before. In the oven or pot. Its the Most laborious part of the gumbo. I also pre cook the chicken and pick the night before. 20 lb bag of chicken quarters for 10 gallon pot. 6-7 lbs of sausage. I use the bones and vegetable scraps to make my stock the night before as well. Not sure about the roux. I'd probably say I use about 5-6 cups? Not sure about stock either. I kind of just eyeball consistency. Add the roux to your veggies, not stock, and incorporate when veggies are cooked down.
