Looking at taking family to Europe for the Holidays and started researching great locations and Christmas Markets keep popping up

yes - make the roux, then add the trinity - One thing could be to reduce the water/broth too

Would you go with a 1:1.25 of oil:Flour ratio?

Love making gumbo and love making roux - kind of a like a rite of passage

But I love going to restaurants that have a really dark and thick roux

I can get my roux to a dark chocolate color but when i add the trinity/roux to the boiling water and chicken stock, it always seems to lighten up and thin out

It tastes great, but other than adding a corn starch slurry, how do you darken and thicken the roux?

I use either bacon fat or veg oil for the fat and a 1:1 ratio with flour

Enough to do to hang at the resort some days?

Also, will have a car and hit different beaches - what beach clubs?

Flight into SBH was booked so having to ferry but will be flying out

Just finished Line of Duty on Amazon Prime and Brit Box. What a great show and story telling.

I am sure it has been discussed here but search showed nothing so I apologize if already been picked apart

Having gone to the Cliffs, they are impressive. But you may be there an hour - but at least you see them, right?

Just returned from a 10 day golf and sightseeing trip

We didn't do Belfast and that sounds like a great trip to go see.

I would try to see the Cork region and the harbors of Kinsale - beautiful and you can go see the Lusitania museum - I would so see Kilarnney

In Dublin, i would highly recommend the Guinness museum and distillery - I am not a fan of the beer, but it is well done -

We had dinner one night in Dublin at Sol Seafood (excellent) and then Tomahawk (phenomenal)

That’s where we booked too - how much did you stay on resort or travel to other beaches?
Do you have a tankless water heater?

We had the same thing and come to find out, the inflow for the water heater needed a regulator on it and shut off the hot water flow to the multiple head showers if the flow was too strong

I know there are a ton of great Caribbean options but been recommended to St Barts - so just wanted to hear those who have been best places to stay? Is it really worth it over other locations?

Agree - take the train to Florence - we hired a private guide for the day and we did all the sites in short order - Have to see The David and walk the city- my favorite

Client sent me a pizza oven for Christmas - amazing gift

But I have never done home pizza and it appears you can order frozen dough and let it sit out to rise or make your own, which is unlikely for me

Pizza cookers on here - what the best go to pizza dough balls or store bought crusts

For additional insight, while i am not a hunter, I like to do outdoors stuff, target shooting, ATVs, etc. So while it is an investment, I was kind of thinking about putting maybe a lodge/small getaway - wife loves the idea to go out and have property. So after writing the original post, starting to thinking about what it is about land and I think it is that - a place to go play, spend time outside etc - probably excessive but great place for kids/grandkids etc

Not sure - probably more than 50 acres - happy to sit on it and play the long game when I sell it
