We've used USA Transfers several times with no issues for airport transfers. Their website shows they also do hotel to hotel transfers.

Cutting them with a knife and fork sounds like some kinda yankee thing.
There are usually a few entries put on the judges table with several judges at the table. Each entry is passed around the table for each judge to sample each entry. You use a new fork and knife for each entry tasting. So I think it is more of a sanitary precaution so you're not picking up and eating a rib that someone else has already taken a bite out of.
