Shrimp Po-Boy at Castnet Seafood. Half pound of shrimp fried to order with mayo, lettuce, tomato, pickles, and a drizzlw of ketchup.

Not exactly. Although it'll be close to what Gene's served, they didn't use Patton's. They made their own hot sausage and hamburger patties.

Piece of salmon, Paul Prudhomme Salmon Magic, 10 minutes. Cooks it perfectly and you can't get a crispier skin.

If you don't like PP's Salmon Magic, use any seasoning blend you want. You don't have to use a wet marinade or glaze to keep is moist though.
What brand of Vacuum sealer you got, geauxnc?
This thread makes me miss Pomes / Treitler's out tha Parish.
Buying a new sealer, and I still have a lot of Foodsaver bags, but considering a Nutrichef model.

Are these Foodsaver bags universal? Can I use them with the Nutrichef? Anybody ever done that?

Need a solid, reliable, user friendly, easy to use, not too involved vacuum sealer just for freezing meats and what not for family home meals. No huge projects or anything.

Suggested Sides for Leg of Lamb

Doing a boneless leg of lamb for Easter Sunday ... need suggestions for sides. I've roasted leg of lamb before, but I always just carved it on a cutting board with pitas, lettuce, tomatoes, onions, and tzaziki put out for everyone to just get down on their own.

This will be a sit-down Easter dinner though. I need suggestions for sides. All I can think of off the top of my head are some roasted rosemary potatoes.

Any other suggestions/ideas? Thanks in advance.

... and no, it wasn't your imagination. Pork necks and turkey necks produce the best gravies known to man.

My favorite way to do them is simply put a heap of them in a crock pot on high in some seasoned water, and 6 to 8 hours later that evening I take them out and make a gravy from the stock. I usually add some smothered onions, peppers, and garlic to that gravy as well when I add the necks back in. Undefeated meal.
Thanks for the recs, guys ... but I'm trying to see if anyone has used them instead of wood chips in the tray of a propane VERTICAL smoker, not a grill.
Logically, seems like a good plan, but have any of you ever done this? If so, what brand did and wood type did you use?
This will be the first challenge I participate in.

Can you lay out the ground rules if you don't mind?

The problem is ... his famous 757 is sitting ia an airport in Orange County New York, about 50 miles outside of Manhattan.

One engine is missing parts, and the other is shrink-wrapped in plastic.That thing ain't going nowhere right now.

Mo's Pizza ... 1112 Ave H, in Westwego.

Great hole in the wall lunch spot ... thin-crust pizzas, calzones, lasagna, sandwiches, & beers.
My family loves air fryer chimichangas.

Make some taco meat, and fold in some cheese while it's still hot to get it melted all together. Roll it tight in a flour tortilla like its an egg roll, tie it with a piece of butcher string, spray it with some pam style spray, and fry it in the air fryer ... between 5 to 7 minutes (you'll have to get use dto timing with your air fryer) ... the tortilla comes out toasty, crispy, and flaky .. and of course the filling will me melty greatness.
