I’ve started using beef tallow recently. That has been a level up to my gumbo.
I just save my trimmings from bbq, and once I have a gallon ziploc I cook it down.

Moved to Mooresville 5 years ago with the family from Mandeville. It's been great like others have said.
That I-77 stretch is brutal at rush hour, other than that I would have nothing but positives to say about our experience here.

The only issues I ever have seem to be configuration related. I have have a job requisition my inbox that will not let me cancel it, and it's driving me nuts.
Most likely someone on our HR side set it up so that I can't do that, and that's not Workday's fault.
The UX could use some work, as not every "action" is very discoverable.
