How long do you brine for a small bird like a chicken? I’m planning to brine and smoke some wild ducks, so only about a pound for the whole cleaned bird.

With dough a longer fermentation time develops flavor and gluten. Youd be surprised at how much is gained flavor wise by retarding the dough in the fridge overnight. You can get the gluten development a lot faster but for flavor in the crust you need longer and there’s two main methods, either use a lot less yeast and a longer rise time at rm temp or use the same recipe but make the dough balls 1-2 days in advance and let it ferment in the fridge in a bowl covered w plastic wrap. Just my two cents.

Wait but you have enough groceries to make 4 burgers. Or at least 3. I couldn’t find a patty size for curbside or burgersmith but five guys is a quarter pound. And even if you want an 8oz patty, you can make 2 more burgers for $6.93 until you run out of buns. Or just make 6 grilled cheeses for free.

Oh yeah, if you check the control voltage when the ac is running and it’s 0v, you know it’s something upstream, maybe the thermostat or the board (or maybe the pan in the attic is full, it’s possible for that float switch to toggle on/off if it’s draining very slowly).
If you check the control voltage and it’s good, and the contactor is also good (240V on downstream side) then you have a fan issue or you have a capacitor problem. Capacitor is cheap and easy to replace but the terminals can carry charge and shock you even when disconnected from a power source so handle carefully even once removed if you choose to go that route.

Also possible that your contactor is having problems sucking in the contacts. Contactor and cap are not hard to replace and are cheap, I would start there.
If you are electrically inclined you can check the control voltage on the contactor (the small wires that connect on either side) when the ac is turned on but the fan is not running. If you see 24V there then check the voltage on the motor side of the contactor. If you see 0v you know it’s a bad contactor. If 240v that’s not the problem. Keep in mind you’re measuring exposed voltage though, so no touchy of course. That’s a cheap and easy thing to do first before calling someone out.

Yeah but even if spores are present, they need several hours at rm temp to grow into bacteria that will make you sick. There are bacterial and fungal spores in our general environment everywhere. They are present in raw flour, on the outside of vegetables, etc. but only become a problem when in a wet, warm environment for an extended period of time. When you cook food you kill the living bacteria and fungi present in and on food. As stated earlier spores may still be present, whether first time cooked or second. That’s why we refrigerate food after cooking, so spores (and other bacteria and fungi present in air) can’t contaminate and grow in the food enough to get us sick. So if he re-boils the gumbo then refrigerates it, it will be safe. Or as safe as it was the first time.

Well wouldn’t the spores be in there anyway from the get-go? If you bring it back to a boil and then cool and refrigerate per normal it would be safe bc if there are any spores in there (which would be present anyway whether it was left out or not) they wouldn’t be at temp long enough to grow.

Storing under a roof of any kind is a huge difference from keeping them in the rain and direct sun. We have had bikes under a porch roof for several years (at least since 2020) and I’ve literally done no maintenance on those bikes besides topping off the tires and tightening loose bolts for the wheel wells. I’ve changed one flat tire in about 7 yrs of riding bikes. Do get a bike pump and a spare tire, and check the tire pressure every couple of months; best way to get a flat tire is riding on one with low pressure.
If you do plan to keep in the rain, I would recommend getting a bike with an enclosed chain.

I have a dead spot about 300ft2 I want to sod over, as well as some very shaded areas in the backyard that haven’t had any St Aug since I moved in. I know there’s a chance it won’t take in the shade but I’m going to give it a shot. Is now an okay time of year for this?

I want to kill buttonweed and also do a general application of atrazine cocktail (cleggs) now that it’s cooled off a little. Is there any reason I can’t mix all in the same sprayer?

Are you including any oil or even a little sugar in your dough? Both should help w browning. If you’re only cooking at normal oven temps they won’t burn. (My understanding is that if you have a pizza oven you need to keep anything but yeast flour and salt out of the dough. Never used anything but a regular oven myself though.)
I’ve never used AP flour straight, but I’ve used a 30/70 bread flour whole wheat flour mix and had trouble with the dough tearing. Using 100% white bread flour (which is what I believe 00 flour is, just more finely ground) I could stretch it, throw it, etc as much as I wanted. I’m guessing if you’ve used straight AP flour with good results you don’t have any tearing issues then?
This is my recipe for a normal oven using a pizza stone at 550F (New York style pizza):
Three pizzas:
900g Bread Flour
558g water
16g melted butter
17g olive oil
36g sugar
1/2Tbsp yeast
Primary fermentation 4hrs, then shape the dough into balls, rest them for 10 mins while getting ingreds out, then make one at a time into pizza shape, put on ingreds and put in the oven immediately. Make next pizza while first one bakes. I didn’t time them just kept an eye on them and pulled when they were brown and the cheese was bubbling.

Tech should be able to troubleshoot the issue by testing the control ckt point to point until he finds the device stopping the gas valve from actuating and lighting the furnace. I don’t think he should be just replacing a bunch of stuff all at once without a good reason. On some furnaces there is a an error code light that will flash when it won’t start; check the light sequence against the model number and it might give you a good idea what’s wrong.
If I had to guess the control board is the most money, so at least consider replacing the smaller parts (flame sensor and whatever else) before being scared off by the $1200 price tag. Again he should be able to follow out the control ckt at least to the point where it stops getting voltage to identify at least the first issue. Or maybe at very least give a good reason why he can’t accomplish that. Just my 2 cents.

Unfortunately I am not the original purchaser. From reading online I am guessing it would be in the range of $1500 to replace the heat exchanger.

I am also concerned about this. It appears some jerry-rigging was done on the system in the past (one of the roll out switches was missing/jumpered) and I am concerned about replacing only the heat exchanger just to have it crack again in short order.
I think I need a second opinion to confirm if the exchanger is actually cracked; does anyone have an HVAC contact they would recommend?

Found out this wk that my furnace has a major problem (started tripping the flame rollout switch) and according to the ac repairman needs to be replaced due to a crack in the heat exchanger. He said he could not see a crack but determined there was one by process of elimination (checked the gas pressure at 3.0in h20 when running and 6.5in when stopped, checked the exhaust for blockage by removing the vent temporarily while running, and cleaned the metal gas channels between the incoming line and the heat exchanger). When running, the front of the furnace gets too hot to touch, so I also know it’s not the sensor itself.
Anyway they told me that after first of the yr any new systems installed will have to meet higher efficiency ratings (16 seer), and if I replace only the furnace now, and if I later have to replace the outside unit, it’s not clear how compatible they will be. So I’m left choosing whether to replace the furnace (appx 3500) or the whole system (appx 10500). The old system has a mfr date of 2010. Also if it’s relevant it looks like some prev work was done that is kind of dubious (one of the two rollout switches was not present and I guess is jumpered across), and I replaced the contactor on the outside compressor earlier this summer bc it went bad.
I’m looking for advice on what to do. Furnace or whole system? Get a second opinion?

My favorite play for him this game was Zion feigning a drive, sucking in the defense by just a step and Herb immediately sprinting to the basket for the layup. So refreshing to see plays happen like they’re supposed to.
