Thanks for your kind words. The police know who they are. Most of whom are recent transplants from up north. They hop from town to town and the NOPD wont dedicate a surveillance squad to finding vandals.
When we get a tip they are around we will call them up and try to get them arrested

Your welcome to come by and I can give you a tour of the kitchen so you can see it for yourself. I am there almost everyday and walk through the kitchen and see everything being made. During the holidays the vendors used the kitchen for their catering gigs. Not trying to be combative just telling the truth.

Produce is an issue we continually are working on. Any feedback is appreciated. NOFOX is correct space is a premium at the market.
Cold storage is tough for bulk purchasing and the amount of product we can sell in a timely manner.
We are working on new approach this spring so we provide more product at lower prices.

It has been about what we expected. Our model was that we pay for all the equipment, build out, bus, dish, management and security labor. All overhead.
The vendors are just responsible for their food and labor costs behind the counter. The vendors can move in and test their concepts with no personal guarantees etc and try their concept.
Ideally the vendors can test their concept in the market,
with minimal capital investment, and see if they can open their own space.

Our average ticket is around $10. Not fast food pricing but we feel it is fair for what you get

A few things the market does have a full kitchen and fryer in the back. The front is done for final prep and serving. The vendors do sometimes cook in the stall. But I can assure you the chicken, the wings from koreole are all fried in the back. The brisket is cooked on site as well. It is a small kitchen but the vendors have the system worked out.

Well I did go to Alabama and he went to LSU. It was really just an honest mistake. I'll never find a sandwich recipe good enough for this.
