Bronzed. Season lightly with blackened fish seasoning. Melt a little butter in a cast iron skillet. Over medium heat, sauté the filets until opaque 1/2 way up the width of the fish. Flip and repeat. Hit with a squeeze of lemon. Process usually takes 4 to 6 minutes depending on the size of the fish..

Games at Eric’s. There’s a movie theater…small one in Break. A big one in Dillon.
Crawfish beignets, and a dozen raw with a couple of glasses of Sauvignon Blanc
Fisherman’s Warf was the ticket for them. Well seasoned crawfish, shrimp and crabs.

Friends are driving through Friday. They’d like to pick up 15 lbs of boiled crawfish. Suggestions for the best options?
I’ll hit the sushi joint next week for the first time. We did Parish a few weeks back…fantastic.
