My wife wanted me to post this:
"I need to prepare a breakfast casserole type dish (crawfish or shrimp grits, or eggs with all the fixings...) but I want to have everything fixed and ready in the pan and then heat it up when I am ready to use it. We are going out of town to visit the in-laws and all I want to do is just take the cover off, pop it in the oven and it be ready. What is the best way about doing this?"

Any good recipes? I tried that smothered pork chop recipe that was posted a while back, but I am always looking for more. I usually have a problem with my pork chops being either too tough or too dry.

He clearly knows his stuff and after reading that recipe, I don't know how anyone could think they could top that one. I have tried many of his recipes and they are all fantastic! I can't wait to try this one, too.
