All depends on when the person has passed. If on a Wednesday, you cant get all the funeral details secured that fast to have it that weekend usually - between burial plot (if didnt have one), securing a time and date with the funeral home, payment details, flowers, obituary, etc.

Sometimes it just falls on the next weekend which can feel like a long time after the initial news of a person passing.

This is entirely dependent on if you wish to have the funeral on a weekend so more can make it, not every funeral happens on a Sat/Sun of course
