In my adult life, it has to be Todd Gurley. He played in slow motion. It was sick the piles he'd run into and somehow make it out the other side. He was the master at taking a run for zero gain and turn it into 8 yards somehow. I can only describe it like he was playing in slow motion while everyone else was at full speed. It was like watching a video game.
Runner up- Isaiah McKenzie. Watching him in space or on kick returns was like watching a video game. He just didn't have the size to be a superstar, but all the speed and agility in spades.
