Mobile, Alabama invented Mardi Gras. And just like in football, Mobile, Alabama whips Louisiana’s arse when it comes to gumbo.
The whole creole deal ran from New Orleans to Pensacola. The French/Spanish/Native Americans/English-Irish (confederates)/African/Carribeans were in all three. Acadia is the only place that is different; that was the displaced French cajuns. Creole>cajun in every way.
