Awesome. In Huntsville, AL with friends, getting ready for the big dance tomorrow in Knoxville. I think I'm having Tylenol PM withdrawals.

Dump that and switch to Melatonin pills.

I haven't decided yet. I'm doing this Take a Meal thing today for a friend of mine/coworker who started chemo for breast cancer yesterday. Several of us have signed up to provide their dinner every day for the next month. She has an elementary aged kiddo and a toddler and I'm gonna go with a kid friendly dessert to accompany dinner.

It may just be a trip to the store to see what looks good on the fly.

If I ever get back home I'll give them a try. Right now I'm just trying to survive this bout with indigestion my friend's lasagna gave me. Pasta has never agreed with me.

That is really sweet of you.

My go to meal(if I am cooking it for myself to eat) is BBQ chicken. It is so easy to cook.

If I can do it, anyone can

Nah. Just the right thing to do IMO.

My go to meal is always Cacio e Pepe (Parm and pepper pasta). Just noodles, butter, parm, and a little pepper. It's stupid simple and soooo good. Doesn't hurt that it's fairly easy to fix when drunk too.

What kind of noodles?

I feel like that recipe is one more spice or ingredient away from being really legit.

Fettucine or spaghetti (I've used both).

I promise it's legit with what it has. The key is using a good parm though. If I'm in the mood I'll fix my noodles from scratch as well.

ETA: Occasionally I'll throw in some variations. Like roasted garlic or chicken. Maybe a little Pecorino Romano.
