Think UT got the short end of the stick tonight. Wonder if we’ll see Doyle tomorrow or again at all this weekend, while Dutton never got to the mound.

Not on a foul ball. But even if the ball had been fair and the infield fly called, the runners must tag before attempting to advance at their own risk. The only thing the infield fly rule does is protect the runners from being FORCED to advance by the batter being called out and the runners caught in a double play. Since they still have to tag, the defense could allow the ball to drop and easily turn a double play.
Interestingly enough, if there are runners on base when the infield fly rule would be in effect, if an infielder, at the umpire's discretion, intentionally drops a line drive in order to turn a double play, the batter is out and the runners return to the previously occupied base.

I umpired for several years, admittedly not at the college level, but accurately calling balls and strikes is just not that difficult.
The problem is many of these guys come on the field with an attitude and it starts at the plate meeting. Worked with a guy once who had been in the business for probably 35-40 years. At the plate meeting the coaches seemed amicable until Mr. I'm The Guy in Charge belligerently stated he's "not going to put up with any mouthing or the questioning of his calls." Shocked me and the coaches just stood there dumbfounded. Never worked with that prick again.
