You've never had it cooked properly.

Alligator is very lean, it cannot be over cooked by even 5 or 10 degrees or it will dry out in minutes.

It needs to be cooked to 140 or so and taken straight from the grill or pan, straight to the table and allowed to coast up to 145 or so while it's being eaten.

If it's cooked perfectly and allowed to sit around while other entrees are prepared or finished, it will dry out.

Frying it is also very tricky and needs to be closely monitored, just like shrimp.

Blackened gator steaks are my favorite preparation.
The super high heat allows the inside meat to almost steam itself and the very short cook time keeps it juicy and moist.
