Rodent of unusual size? Don't y'all eat those things down in Cajun country?

I see quite a few recipes for nutria. I'm just saying. A tasty water rat is a tasty water rat.

Oh I'm sure plenty of people eat it. This lunatik isn't eating it though. I draw the line on rodents at squirrel. I heard Booger McFarland say on TV that he prefers possum over racoon because he can season the possum better.

I have had both possum and racoon. Both are... well... possum is less awful. We are talking ghost peppers to mask the flavor of racoon and I am not sure that even they would do the trick.

Whereas alligator, a critter I never thought I'd eat, tastes like greasy chicken to me. I could eat that by the pound.

Gator is delicious. We did some pork/alligator sausage for the Florida game this year and if was amazing.

Spending time in the state know for burgoo (basically road kill stew) I would put rabbit and country squirrel at the top of the list. Groundhog can be a bit greasy but will do. I put possum, raccoon, city squirrel, and rat more geared toward eat it if you have to, not because you want to.

For safety sake, generally avoid ground critters that have high probability of rabies.

And you didn't save any for us? It's like I don't even know you any more TL.

That does sound amazing.

Battered and Fried gator chunks with some good Tarter sauce to dip it in is probably one of my favorite things to eat.
