I've got a wife for this one (no pics).
I'll give you some tips on your next mess of greens - works for collards or turnips.
Use only tallow or lard, and more than you think you need. Cook some finely diced onion and garlic in that over medium heat for a couple of minutes. Add in your greens and season - you've got some flexibility here but go easy on the salt, some onion powder, paprika, black pepper, cayenne. Then you want a couple of sprinkles of sugar (if they come out sweet, you used too much - bitter, you used too little).
Turn your heat on low and stir the greens until they're all coated in fat. Cook until they start to soften. Add in chicken broth, just enough to cover your greens - don't cheap out and use water here. Bring it to a boil, and cover. You'll see/hear people saying leave them on a light boil for an hour, but I like a little more texture to them. Usually 40 minutes is a good amount.
Serve with a meat of your choice and corn bread. Dab some pepper sauce over them. Enjoy.

I post on the Arkansas board more during basketball season than anything. I've been down on Sam but the Petrino hire brought me back on board.
