I'm stuck in a real Catch-22

Got a new phone. Got all my apps and data transferred. I open the Gmail app and it wants me to verify the new device first, so it tells me it has sent a message to my Gmail, and I need to open the message on my new device...the device in which I'm trying to get verified.

That option was grayed out and I couldn't select it because "there are more secure options".
I have to admit, sending a message to an account I can't get into is pretty secure.

I have switched phones a couple times. But it’s never not given me the option to verify with my phone #

I deleted, then re-installed the app. It let me do it with my phone after that.
That's really the "turn it off, then turn it back on" of the 2020s.

Situation has been resolved, but that wasn't an option as I had to "click yes" on my new device.

Me too. I was worried I'd miss that email from the Nigerian prince I sent all my savings to. He's gonna reply back any day now with info on how his uncle is going to pay me $500k for helping him in his moment of great need.

I've run across this too.
In your Google account settings, go to Security > 2-Step Verification and under Second steps, add your mobile number.
When you're authenticating next time, select "Try another way" or something similar, and choose to have it send a text. Oftentimes it will automatically authenticate without you having to do anything further (if it automatically recognizes the text).

I tried that, too, but it would just load the same screen. Once I deleted the app and reinstalled, there was no issues.
