Lived in FL from LA and live coastal MS. FL has more varied options as you mention but FL can’t season their food at all. It’s fresh but all tastes the same. Also, Lobster is the most over rated seafood item ever, especially warm water lobster.

Yeah, Florida seafood is probably a little healthier than Louisiana seafood, but they could use a little bit of education on sauces and seasoning.
I've never understood the fascination with lobster.
