The EOLA is a great B&B if you want the real Natchez experience.
I recommend The Magnolia Grill (nice view of the river and good seafood) and Roux 61 (great char-grilled oysters) for eating out. Biscuits and Blues is good too.
The Visitors Center is pretty nice and you can arrange tours there.

Thanks for the recommendations. The Eola is next door to Natchez Brewing and very near to the other restaurants we would like to visit.
Besides food, are there any specifc outdoor trails that stand out? Is the Natchez Trail a must see? Also should we consider making the short drive to Vidalia?
As far as plantation tours, I saw Dunleith recommended a lot. In fact, the Globe Trecker show on WYES went there and it looked beautiful. I think this will be our one plantation tour.
Finally, we are going Saturday to Monday. It doesn't appear so after a quick search but does the town shut down on a Sunday?
