Sure, Alabama is as a dominant as you can get in college football today. But even that means you lose on occasion. Plenty of other good teams out there and it's very difficult to win every game. LSU, Auburn and the CFP (if applicable) will all present teams that can beat Alabama.

It's actually not arbitrary at all. Arbitrary means based on random choice rather than reason. It's not arbitrary to start with the first year of Alabama's current run of NCs when talking about Alabama's current run of NCs. It's actually a very reasoned and common frame of reference when discussing those types of streaks/eras.
